2 boneless skinless chicken breasts
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
4 cups cubed French or Italian bread
3 tablespoons olive oil
1/4 cup shredded parmesan cheese
1/3 cup extra virgin olive oil
1/4 cup lemon juice
1/4 cup mayonnaise
2 teaspoons Dijon mustard
2 minced garlic cloves
1 tablespoon chopped capers
2 hearts of romaine lettuce
1/4 cup shredded parmesan cheese


Instructions

Preheat your oven to 375℉.
Arrange bread cubes on a sheet tray, drizzle with olive oil, sprinkle with parmesan, salt, and pepper, and toss well.
Bake for 13-15 minutes until golden brown for the croutons.
Drizzle chicken with olive oil and rub with Italian seasoning, salt, and pepper.
Grill chicken for 5-7 minutes per side over medium-high heat.
Let the chicken rest for 5 minutes before slicing.
Whisk together olive oil, lemon juice, mayonnaise, Dijon, garlic, and capers in a bowl.
Toss the chopped romaine with the dressing and top with sliced chicken, croutons, and extra parmesan.
