Description

Experience the warmth of a crisp morning with this elevated Pumpkin French Toast. Thick slices of buttery, rich brioche bread are soaked in a spiced pumpkin custard and griddled to golden perfection. It is a comforting, seasonal breakfast that balances earthiness and subtle sweetness, perfect for creating a cozy atmosphere on lazy weekend mornings.

Ingredients

Scale

8 oz Brioche loaf
4 large eggs
1/4 cup whole milk
1/2 cup pumpkin puree
1 tbsp brown sugar
1 tsp pumpkin pie spice extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Pinch of salt
Canola oil for the pan

Instructions

Slice the brioche loaf into eight uniform pieces about 3/4 to 1 inch thick.
In a large, wide bowl, whisk together eggs, milk, pumpkin puree, extract, sugar, cinnamon, nutmeg, and salt until smooth.
Preheat a large non-stick pan over medium to medium-low heat and coat with a thin layer of canola oil.
Briefly dip each brioche slice into the custard mixture, coating both sides well without soaking too long.
Place slices in the hot pan and cook for 3 to 4 minutes per side until each is deep golden brown.

Notes

Ensure the pan is fully preheated before adding the bread to prevent sogginess. Brioche is delicate; do not submerge it in the liquid for more than a few seconds per side.
