16 slices turkey bacon
12 slices hearty white sandwich bread
16 1/4-inch-thick slices vine-ripened tomatoes
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup mayonnaise
8 romaine lettuce leaves, cut in half crosswise
16 slices deli turkey
16 4-inch toothpicks


Instructions

Cook the turkey bacon in a large skillet over medium heat until deep golden and crisp then drain on paper towels.
Toast the sandwich bread slices until golden brown and allow them to cool slightly.
Spread a tablespoon of mayonnaise on one side of each toast slice.
On the first slice, layer the lettuce, tomato, turkey, and crispy turkey bacon.
Sprinkle with a pinch of kosher salt and black pepper.
Add a second slice of toast and repeat the layering of ingredients.
Top with the final slice of toast, mayonnaise-side down and press down gently to secure.
Cut the sandwich diagonally and secure each portion with a toothpick.

Notes

Use multi-grain or whole wheat bread for an extra fiber boost. Letting the toast cool slightly prevents the mayonnaise from melting and preserves the structural integrity of the triple-decker stack.
